Vinification:
The Mourvèdre was drawn off after malolactic fermentation in new French oak barrels, while the Shiraz was aged in tanks with 100% new American oak staves. The Viognier component comes from a small batch of naturally sweet Viognier, which gives the wine a fuller mouthfeel and fruity flavours.
