The elegant MCC Sauvage La Bri is a Blanc des Blancs made from

100 % Chardonnay grapes. Elegant citrus and biscuit notes on the nose, fresh citrus flavours with a hint of apple on the palate. The MCC has a perfect perlage and fresh, intense flavours. Only 1444 bottles of this MCC were produced.

Vinification:

The grapes were sorted by hand and pressed as whole bunches before fermentation took place in four old French barrels. After three months in the barrel, the base wine was blended, bottled by hand and sealed with crown corks. The Liquer de Tirage was added and the wine was allowed to complete its second fermentation. The Brut Sauvage matured for 71 months on the lees in the bottle before disgorging. There was no dosage.

Goes well with:

Oysters and seafood, sushi, sashimi and ceviche.
