Vinification:
Before pressing, the berries underwent a further selection process to ensure that only berries with 100% noble rot were pressed. The pressing took place over a period of three days. The juice was clarified and transferred to small, selected 225-litre French oak barrels. There was no yeast inoculation; the juice fermented naturally to 128 grams of residual sugar per litre. The wine spent 36 months in barrel before being stabilised and bottled.
Goes well with:
Crème brulée, panna cotta, cheesecake, but also with blue cheeses such as Roquefort and Stilton.
