The Eikendal Méthode Cap Classique is produced in very small quantities. On the nose, it seduces with citrus and lime notes, peaches and a fresh minerality. The slow fermentation creates a very fine and pleasant perlage on the palate.

Fermentation took place in stainless steel tanks at around 12º C, using only naturally occurring wild yeasts. After fermentation, the base wine remained on the coarse lees for six months. The wine was then bottled for secondary fermentation and matured for two years on the lees in the bottle before being riddled, disgorged and finally bottled.
Goes well with:
Salad with pear, goat's cheese and walnuts, oysters, oven-baked brie with raspberries or mushrooms stuffed with gorgonzola.
