The grapes were harvested by hand in the cool morning hours at the beginning of February. After gentle pressing of the grapes and natural cold clarification of the juice, fermentation was completed in 300-litre French oak barrels. The wine remained on the lees until bottling, which is reflected in the creamy texture on the palate. The wine was made with minimal intervention to reflect the true character of the Moordenaarskloof vineyard.
