The Diemersdal Private Collection smells of dark chocolate, blackberry, cherry and cassis. The palate is opulent with a perfect tannic structure and offers a wide range of flavours from black cherries and red fruits to subtle oak and vanilla notes. The wine is ready to drink now and has a fascinating character, but will certainly develop wonderfully over the next few years.

Vinification:

The grapes were hand-picked, destemmed and fermented in open fermentation tanks. A punch-down was carried out for 5 - 7 days, whereby the marc was mixed with the fermenting must by purely manual stirring with wooden sticks. Malolactic fermentation and maturation then took place for 18 months in 225 litre French barrique barrels.

Goes well with:

Boeuf Bourguignon, goulash or other savoury meat stews.
