The grapes were hand-picked, destemmed and fermented in open fermentation vats. A punch-down was carried out for 3 days, whereby the marc was mixed with the fermenting must by purely manual stirring with wooden sticks. This was followed by malolactic fermentation and maturation for 19 months in French barrique barrels (50% and 50% second passage).
