Vinification:
The grapes were hand-picked, destemmed and fermented in open fermentation vats. A punch-down was carried out for 3 days, whereby the marc was mixed with the fermenting must by purely manual stirring with wooden sticks. Malolactic fermentation and maturation then took place for 20 months in 30 French barrique barrels (20% new) and two American barrels.
