Vinification:
The grapes were hand-picked, destemmed and fermented in open fermentation tanks. A punch-down was carried out for 3 days, whereby the marc was mixed with the fermenting must by purely manual stirring with wooden rods. Malolactic fermentation and maturation then took place for 20 months in French barrique barrels (50% first and 50% second passage).
